Chicken & Peppers Enchiladas

1. Cut up chicken breasts into strips and saute in olive oil. Add chopped onion, sliced peppers and mushrooms.
2. Add 1, 4 oz can of green chiles (marked as green pepper). Sprinkle with fajita seasoning and add 1/4 cup of water. Stir in cottage cheese and take off heat.
3. Prepare baking dish by spritzing with cooking spray and spread around one Tbsp of the enchilada sauce (I use mild sauce, your choice of course)
4. In a non-stick saute pan sprayed with cooking spray, cook 1/3 cup eggbeaters on medium heat to make a crepe. Once almost cooked through, gently flip for just a second. Make 4.
5. Spoon 1/4 of the chicken & pepper mixture onto the middle of a crepe. Gently fold over and place seam side down in the prepared dish. Make 4.
6. Spoon enchilada sauce over the top and sprinkle with the grated cheese.
7. Bake in preheated 350 degree Fahrenheit oven for 20 mins or until cheese is bubbly and brown.

Makes 2 servings, serve with a side salad (1-1/2 to 2 cups leafy greens) for your remaining Green. Try spooning a little of the pan drippings over your greens.

Per serving provides approximately 1 Leaner, 1 Healthy Fat, 1-1/4 Green (without salad), and 5 Condiments. Please note, that while the Condiments are greater than 3, our typical recommendation, the total carbohydrates are well below the recommendation for the Lean & Green Meal (<15 grams) making it appropriate for the Medifast program.

I left out the fajita mix and added some really spicy hot sauce. Excellent!

We loved it! The only thing is that the recipe ingredients are out of order and that confused me a little bit. Other than that, very tasty!

What if I don't have the fajita seasoning can I use one from the store and just add more chicken to get my full lean?

We have been trying out several of these recipes over the last couple of weeks and most are really good. Who would think it, cottage cheese and eggs in a enchilada dish and no tortillas....great dish

The cook time is time in the oven and doesn't include stovetop preparation of the chicken & pepper filling or crepes, so start to finish this takes about 45 minutes. BUT it's really worth it because the results are great. My husband loved the filling and the overall meal was very satisfying! Definitely recommend this recipe .....
