Cauliflower with Chili, Lime and Cilantro
Red Pepper, ground
Lemon or Lime Juice
1. Preheat oven to 325 degrees.
2. Prep the ingredients: Chop the cauliflower into small to medium sized florets. Mince the garlic if using cloves (1 clove = 1 tsp).
3. Place cauliflower florets in a bowl with the garlic, chili powder, red pepper, cumin seeds, salt, and olive oil. Toss gently to mix together and coat well.
4. Spread the seasoned cauliflower in shallow roasting pan.
5. Roast 1-1/2 hours or until tender, stirring occasionally.
6. Dress with lime juice.
7. Finish with chopped cilantro leaves.
